Trader Joe’s 50th Anniversary

I shop religiously at Trader Joe’s. As a divorced mom to a 9 year old boy, I have to. The prices are fairly good and my son likes most of the prepared foods. Shopping there is one of the few shopping trips that I enjoy. This past weekend, they celebrated their 50th Anniversary. My friend in Arizona reminded me in the early afternoon hour about the celebration. I hopped in my car and made my son go with me.

My local TJ store had a fun scavenger hunt for the kiddos and my son earned a small goody bag. Root beer floats were generously given to guests. The deals included 50 cent items such as canned corn, spaghetti, avocados, a dozen eggs, and french baguette. Needless to say, I stocked up on everything and then some.

10 cans of corn, spaghetti packs, and avocados. You’re probably thinking…wth? I love a bargain so I’ve been researching canned corn recipes.

Marcela Valladolid Corn and Poblano Lasagna

Ina Garten’s Guacamole Salad. (Ok, this doesn’t call for corn but I think the corn would be a nice addition to one of my favorite recipes from The Barefoot Contessa.
